INGREDIENTS

For the Chicken Tacos: 2 cups of diced tomatoes. 4 cups of chopped tomatillos. 1 cup of chopped onions. 8 cloves of minced garlic. 1/2 jalapeno peppers cut up. 3 tablespoons of olive Oil. 1 chipotle pepper cut up. 1 teaspoon of cilantro. 1 teaspoon of dried oregano. 1 chicken breast.

Chicken Stock is used as a base for the tacos. Kosher Salt and Fresh Cracked Pepper are added to the tacos. Avocado is diced and added to the tacos. Cotija Cheese is crumbled over the tacos. Flank Steak is finely minced and added to the tacos along with Cumin.

This recipe calls for ground beef, but you could use any type of meat. The spices used in this dish include chili powder, cilantro, kosher salt, and freshly cracked black pepper. You need to make tortillas before cooking the meat. The masa flour is made by grinding corn kernels into a fine meal. Warm water is added to the masa flour until it forms a dough. The dough should be kneaded until smooth. The dough should then be rolled out thin enough to cook over an open flame or grill.

DIRECTIONS

Preheat the oven to 400 degrees. Roast the vegetables on a non-stick baking sheet tray. Toss them with 2 tablespoons of olive oil and seasonings. Bake at 400 degrees for 30 to 35 minutes. Mash the roasted vegetables together with the chipotle pepper and spices.

Seasoning the chicken before cooking helps the meat retain more moisture. Searing the chicken over high heat makes sure the meat gets cooked evenly. Adding the tomatillos and stock gives this dish a nice flavor. Shredding the chicken after cooking also helps the meat retain more juice.

Beef is delicious when cooked properly. You should use a large saute pan and cook slowly over medium high heat. Let the meat cool down before you combine it with tortilla mixture.
